Castlevania: The Adventure ReBirth is a great classic style Castlevania. It's a retelling of Christopher Belmont's first adventure and I enjoyed it a lot.

Castlevania: The Arcade is interesting as you can use a motion controller to emulate it pretty much perfectly. It's essentially a lightgun shooter with you wobbling a cursor to swing a whip.
I managed to complete Castlevania Judgment without much issue, and I'm a button masher that's terrible at fighting games. At least the stories and dialogue is amusingly bad, and the reasonings for fighting are laughably dumb, like Trevor annoyed at his wife for not doing chores or Maria and breasts
Order of Ecclesia is a very fun game, but I found the first half frustratingly difficult, then a single ability in the second half made it very easy
I wasn't a fan of the PSP port of Rondo of Blood in The Dracula X Chronicles. It feels slow and it's quite ugly. It did come with the original Rondo of Blood and a new port of Symphony of the Night, with a new move set for Maria.
Castlevania: Order of Shadows is an interesting little game, a brand new Castlevania for Java-based mobile phones. It mixes classic style Castlevania with levelling up, equipment and magic from later games. It's just the controls that spoil it.
Castlevania: Portrait of Ruin has an interesting dual character system, plus some nice locations you access via paintings. Another great game.
The combat in Castlevania: Curse of Darkness is really good, but the levels are just so boring, not to mention the rather bad plot. Kind of the opposite of Lament of Innocence.
I thoroughly enjoyed Dawn of Sorrow, especially the bonus mode. Brilliant game.
The hardest thing I found about Castlevania: Lament of Innocence was not falling asleep. Dull combat and a terrible camera mainly looking at a bit of floor doesn't make for an exciting game.
The gameplay of Castlevania: Aria of Sorrow feels wonderful, even if I wasn't as much a fan of the exploration as the other GBA Castlevania games.
I absolutely loved Castlevania: Harmony of Dissonance. Exploring the dual castle felt satisfying and rewarding, and the magic spells for the sub weapons feels great without being convoluted.
Castlevania: Circle of the Moon is a great game, with a few annoying issues like terrible drop rates, which messes with the game's interesting magic system.
My second time playing Castlevania 64 (which was my first Castlevania). I nailed the nitro run first time. Still a fun game.
Symphony of the Night is a brilliant game, but I really don't recommend getting the good ending, it drags looking for all the rooms. Gameplay and exploration is great, though.

Castlevania Blood lines absolutely oozes Mega Drive, and is an incredibly fun game as well.
All I knew about Rondo of Blood was that it was a Japanese exclusive until it was remade on PSP. I wasn't expecting such a brilliant game, my favourite of the classic Castlevanias.
The Sharp X68000 version of Castlevania is an interesting remake of the original game. It's just so insanely difficult.
I have mixed feelings about Super Castlevania IV. The whip is fun to use, but the game doesn't seem to be designed around how versatile it is.
The second Game Boy Castlevania is a huge improvement. Movement is good and lots of enjoyable sections.

Castlevania: The Adventure is slow with some pretty bad platforming - but for a GB release form its first year, it's not really that bad. Devs had to learn what it could do. (Screenshot from the GBC re-release)
After everything I've heard about Simon's Quest, I was surprised to discover that it's a really fun game that just needs a guide for a couple of sections (the most obtuse one is something everyone already knows). If this is the worst Castlevania, then I'm in for a great ride.
Vampire Killer, the MSX2 version of Castlevania, is extremely brutal. It swaps the timer for maze-like levels and keys and is like an alternative universe version of the series.
