Sauces and broths tap into that primal cooking instinct for me. It takes me back to when I made mud and grass “brews” on the playground or mixed every condiment packet together on my fries. I just like dumping lots of flavor goos into a pot of boiling leaves. I’ve gotten pretty good at it, too.
I impulse bought a pack of hot pot veggies last night that I put in a whitefish soup. I used a few scallop/veggie dashi packs, ponzu, oyster sauce, and the dashi hot sauce from my friend in Fukuoka. It was honesty one of the best meals I’ve made in a long time.
