Once a month I roast a turkey. Not for pretty table service, just for eating. This is 12 1/2 lbs, cost $13. We'll do sliced turkey with dinner, then I'll strip it and make turkey salad for a week's worth of lunches, croquettes for another dinner and a pot of bone broth to be used in other recipes.
