Today I finished rolling the double ginger molasses cookies. My hands are sore from rolling 79 cookies - the chocolate chips bruised my palms! A couple wouldn’t fit on the tray so I baked them for us. Yum. 🍽️🍜🫚🍪

Operation double ginger molasses cookie starts. I’m making these for a friend’s 60th birthday. She loves them so much she hides them from her husband and son. I’m making 60 cookies. Once baked I’ll put them in a giant glass jar. They need to rest before they’re portioned and frozen. Phew 🍽️🍜🫚🍫🍪

I felt so virtuous I’ve packed up 2 returns and a parcel to mum. Now I just need to keep the momentum going and go to the post office. Making a list and ticking things off it. Less than 2 weeks till we go to the UK.

Very messy tres leche cake for dessert tonight. As predicted it’s very difficult to remove from the cake pan. Vastly improved by the acid of the raspberries. 🍽️🍜🥛🥚🍰

I’m home and survived for first cooking class I’ve taught for 7 years. Smaller group than expected which was fine. We made butterfly mandarin muffins and cheese & coconut buttons. Both recipes turned out fine once I figured how to turn the oven on! Phew.
Now I’m getting nervous. First time teaching at a community centre for a LONG time. Don’t really know how the kitchen works and the coordinator isn’t in today. Deep breaths. I hope the bakers are kind.
