A huge thank you to Matt & Will from Wild West Cider for joining us at last night’s Manchester Cider Club! They took us on a brilliant journey through six ciders and a Perry, sharing the stories, ideas and passion behind every glass. Some seriously cracking drinks, and a great evening all round!
Another blend - Sweet Popping, Crimson King and Dabinett - a 2024 just released
An older Method Traditionelle cider - largely Kingston Black - some acid and a little tannic
Onto a definitely sweet cider - the Entertainer - a blend

Unctuous sweetish cider made from White Norman apples, and our final cider of the night
A single variety Stoke Red - medium sweet cider balanced by high acidity.- cold racked
A dry mainly Tremletts Bitter (with Harry Masters & Kingston Black) cider - disgorged depending on speed of operation rather than freezing the neck

Now this 2021 with lots of Yarlington Mill is rather complex, with a grassy nose and a hint of vanilla and reasonable tannin
A perry from two different unique pear varieties - touch of sugar and a modicum of natural sorbitol 6.6%
Chisel Jersey - still sweet, but a bit more acidity and definite tannins
One of the keeved secrets is to bottle before fermentation has ceased. One gone a bit drier.
A Yarlington Mill single variety - smooth and mainly destined for a blend. Very accessible
