Why is it when I take a break from work I get very sick?

Cutting calories is hard. I think I estimate just right but then I step on the scale and seem to wildly have overcounted my calories (or had a lot of sodium). Right now, I am up 4 pounds from last weeks low, but according to my accounting, I have had no more than 1800 calories in the last week.
