1. i’ll believe it when i see it and 2. so make it? it’s not even aged. you people make clotted cream, you can make cotija. or… just don’t do recipes that call for an ingredient and substitute it with a completely wrong ingredient that “looks similar.” it’s just so easy

Because meaningfully hot summers started happening here (UK) about 10 years ago, behaviour change is slow, and public policy priorities have been elsewhere. Yes the Brits used to be weird about not owning fans but like, these things have a lag time! This is not hard to understand!

One thing I'm really going to miss about Ukraine is that certain (by no means all) services just...work? Nova Poshta being the prime example. No sense that you're being ripped off through a mix of price gouging and multiple layers of incompetent subcontractors, just very fast, cheap delivery.

This is why the humanitarian principle of impartiality - targeting the most acute needs among the most vulnerable - is so important. These orgs are for sure imperfect in how they do that, but it has to be better than the randomness of individual crowdsourcing (before we even get to the scams)
