I think it would be really interesting if more smart non-mathematicians somehow got a real understanding of what mathematical thinking is, independent of the technical details of any particular area of math

This is a good point. There is math, real math, useful important math with new ideas, that is still kinda incremental. And then there's math like Grothendieck did it - math where it's not even realizing you're asking the wrong question - it's inventing a new language to ask the right question in.
