Today I took a day off from Fringe, and went on a agriculture tour of Westlock County. Let me take you with me! First, we visited the ranch of cow-calf farmer Mike Hittinger, who is also the board chair of the Gateway Research Organization. He is an early adopter of regenerative grazing techniques.

For those who asked for my borscht “recipe” — here is one I posted last summer. Not a recipe so much as a play by play!
I don’t have a recipe so it’s a bit different every time. First I parboil scrubbed, unpeeled beets with garlic cloves and peppercorns. I then let the beets cool, and rub the peels off. I drain and reserve the stock.
Oh this is such a shame. The festival is closing down for the rest of the day. The real concern seems to be the safety of the tents. If the pavilions blow down while volunteers are cooking, it could get really dangerous. #yeg #yegwx
