This week's koji failure was likely the result of old spores. I realised how old they were. Doh.

I'm a home brewer with an interest in making good beer, cider, fruit wine, sake & mead. I'm a film photographer on hiatus; I have a Bachelor of Computing & a fancy MBA (with an added specialisation in Journalism & Media Studies). Kampai!!
So that's the second time I've had to throw the rice koji away, and both times it seemed to be pushing it out to a third day without high enough humidity. Last batch I went the three days, but really put effort into nailing the high humidity. I guess it's just koji worm food now.
An update. I've decided to change 'groats' to 'grout' in my 'live' translation. Both are legitimate, but on reflection 'groats' tends to be read as meaning only 'oats'; and 'grout' is the better word for brewing, as long as you realise it's not to be confused with *gruit*, or the stuff for tiling! 😩

The fucking landlords in Britain on here banging on about their need to put up rents because the government boo-hoo... they keep putting up rents, regardless... stupidly... it's a western world phenomena called a mafia shakedown. Greed. Signed - The People Don't Like You Anymore.
Up early to get the first brew day underway outside on the gas - Cream Ale with 40% flaked corn and using Eclipse hops. No wind and not a hot day so it should be fun.
Online I saw an American Libertarian call someone an idiot because water supply doesn't come from rivers!!! I mean, if one were to actually get a good education they might be programmed by the man, but at least they would know something about water sources and such.
Mixed Fermentation Apricot Porter... leaving only one left in the fridge
Milling two batches of grain... it looks like 2 brews in 2 days is on the cards here... a cream ale with 40% flaked corn... and a hoppy lager with Eclipse and Motueka hops. I better hop to the drill and get this rolling.
With my partner away for two whole days I'm tempted to brew outside on gas two days in a row - a cream ale and a lager. Now wouldn't that be something :)

An malt-ernative enzyme source? #Koji isn’t just for #sake! This new article demonstrates yellow koji boosted extract and maltose in lab-scale mashes, while white koji cut mash pH and increased FAN — very promising for high-adjunct and #NAB! Check it out below 👇🏻 doi.org/10.1080/0361...
Evaluating Aspergillus oryzae and Aspergillus luchuensis mut. kawachii Koji for Brewing Extract Production During Mashing
The enzymatic capabilities of yellow Koji (Aspergillus oryzae) and white Koji (Aspergillus luchuensis mut. kawachii) were evaluated in barley malt- and rice-based laboratory-scale systems to assess...

I'm not allowed to own a circular saw. Those who know me... probably understand. Meanwhile, circular saw is on 25% off sale this week. That's my torture. The need for fingers persists.
it would be a rubbish computer without fast accessible memory, Sam... can't wait until we get to eat the rich in the upcoming revolution, man
