Sapphic Book Bake …“The Barcelona Bakery” and it’s by new-to-me author Sally Brooks. MC’s in a bakery in Barcelona!. A delicious read (no pun intended) about finding (and trusting) yourself no matter where you are. Coca de Sant Joan, also delicious.

Sapphic Book Bake!! I am starting off June and Pride Month with my go-to for yummy romance: Georgia Beers and “The Great Popcorn Romance”. I have the audiobook with the divine Lori Prince narrating. Also, Georgia- it’s cara-MEL, not CAR-mel and I will ☠️ on this hill.
C'est la fin!! And so we end the French baking series with as much butter and sugar as possible!! Brioche Feuilletée, canales, baked fromage en croûte with sun dried tomato and garlic pesto, and for fun, a classic genoise with strawberry.
No class today so I finally took up Esposa’s challenge, a Karpatka cake, essentially a giant rustic cream puff, filling is a mixed berry compote and a combo vanilla pastry cream custard. Except for the Coca Cola jello salad, this is the strangest thing I’ve made. Thank goodness it was delicious.

We did puff pastries today, but because of the timing for making the doughs (Lord, the laminating takes F-O-R-E-V-E-R) you’ll see a few here today and then the croissants and danish next week.

Tempered chocolate update. 1st, how to scare the 💩 out of esposa? Listen for her reaction. 2nd, I must be too ambitious for my own good, I went for chocolate bonbon. So, there’s inconsistent shine, etc, but not bad for 1st attempts, pardon my finger indent. Dk choc, biscoff cookie and cream center.
What is wrong with me? I’m going to try tempering chocolate this morning.

Salut!!! The next French delight made, petit four! So, that’s actually French for "small oven.” They are known for being small, delicate, decorative, and usually served at tea parties, etc. It’s also a great way to end a meal if you just want a small bite.
The latest in Surly Teen’s GF’s baking adventures. Apple pie (homemade pie crust and homemade apple pie filling). She definitely likes to create eclectic designs.

Month of March in my office! I am not the only birthday among the peops so I’ve made a lemon tart and a chocolate cake roll with a Bailey’s cream cheese filling.
2nd to last class and we are well into what we like to call, “Hurry up and wait.” That’s right, more yeasted breads!! Added a new bread today as well, the Shio Pan, a Japanese salt bread that is super trendy now. It looks a lot like a croissant but it’s not a real laminated dough. Delish.
I am determined to make one of each of these … one of these days.

Another Sapphic Book Bake for Lee Winter’s “When She Flies” Yes, I made the tea (loose black tea, saffron, cardamom, cinnamon). This tea is ridiculously aromatic. Qottab is a typical buttery pastry filled with a walnut, cardamom, cinnamon and rose water mixed filling. Goes great with the tea!!

Baking class started at 8:30 am and was 5 glorious hours where I worked with students, ran around like crazy, and helped them make beautiful Bundt and specialty cakes. Then I walk outside back into the real world. *sigh*
