Kiddo made it into the top swimming level he can be in at his age. Once he gets into his teens he'll probably move up to high performance. Hoping his swim team at the state amateur competition does well! Made it to state at 11. Absolutely amazing. I didn't get into state anything until I was in HS.

I used to look at these simple little recipes and go "wow, something cheap and easy to make!" And now I'm like "damn, this is gonna be like 20 bucks to make biscuit dough."

Buttermilk biscuit recipe Prep time: 15 minutes Bake time: 20 minutes 2 cups all purpose flour 3 teaspoons baking powder 1/2 teaspoon salt 2 tablespoons sugar 1/3 cup vegetable shortening 3/4 cup buttermilk 1. Heat oven to 425°F. Use an ungreased baking sheet. 2. Combine the flour, baking powder, salt, sugar, and shortening in a food processor. Pulse the flour mixture for 5 to 10 seconds or until it looks like coarse crumbs. 3. Add the cold buttermilk, and pulse the biscuit dough for 5 to 10 seconds. Do not over mix or knead the dough. 4. Sprinkle 1 Tablespoon of flour on a work surface and gently roll out the dough. Cut the dough into biscuits 1 or 2 inches in diameter. Gently press the remaining dough scraps into round biscuits the same size. 5. Place the biscuits on the prepared baking sheet and bake for 20 minutes. Makes: 12 biscuits
