In an attempt to find more spare time under the metaphorical couch cushions, I’m paying attention to how much time I’m spending on food prep each day. Result: damn, hearty salads are very inefficient

Tonight’s #veganfood 🍜 experiment: pasta with chickpeas and a silken tofu cream sauce kinda thing. I put too much miso in the sauce but otherwise it was good and I’m gonna use this base again. The beans and tomato side was also great, they were super fresh

Chickpea, fennel, onion, and garlic pasta with a silken tofu sauce alongside garlic snap beans and sautéed grape tomatoes

Pasta proportions: 250g rotini, 300g silken tofu, 150g onion, 280g chickpeas, 1T olive oil, 2T nutritional yeast, some miso and lemon juice and salt and pepper for seasoning. Also 100g of fennel, but that was just “oh hey I gotta use up this bulb”

Okay I feel a little bad for dunking on these so hard because I was doing macro math and they have a slightly better nutrients:kcal ratio than the granola bars while also tasting better, so, W cookies I guess

I really need to listen to more @maintenancephase.bsky.social because I'm endlessly fascinated with meme ideas about what's "healthy". Like I made some vegan PB cookies with oat flour and the recipe talks about all the wholesome ingredients and like...sure...but they're PB choc chip cookies lmao

Things I made this week (1/4): Alton Brown’s granola bars. Trying to replicate something from my favorite cafe. They’re still falling apart, not sure why (pan? Needs more baking time?). Tasty, tho

Inadvertent experiment today while making flatbreads: the same recipe on a makes pita (3) on a baking stone and naan (1, 2) on a stovetop cast iron. Putting oil on the cast iron (2) produces a better result and doesn’t burn stuff onto your cast iron and mess it up (1) #baking

Did a whole bunch of food prep today and feel like I just did Thanksgiving but without the part where you hang out with all your friends for a while. If I’m gonna get into meal prepping I gotta optimize this

Clover Food Lab (one of my favorite Boston restaurants) posted their recipe for the zucchini sandwich so I made one. I’m very happy with how it turned out

Cooking dinner: when you just freehand a dumpling into your face because you’ve been turned into a dumpling assembly line. It was really tasty

Bao dumpling with TVP and rehydrated dried shiitake mushrooms seasoned with garlic scapes, ginger, vegan oyster sauce, soy sauce, liquid aminos, five spice powder, and some other stuff probably I forget.

I need a better dough recipe this one is failing me. Or different steaming technique.

I am currently on a “bowls” streak and discovering that it is possible to make them not very good. This one had too many conflicting flavors. For lunch I pared it back to just the tofu, greens, rice, and avocado. A sauce would be nice too 🤔🍜

I have a box meal type thing that alleges it takes 30 minutes to prepare. Recipe time estimates are notorious lies, but since I’m not doing anything else I’m going to focus and speed cook and see if I can actually hit it. Predicting 45mins tbh

I have lived out east for 14 years and I’m still surprised (and secretly a little delighted) when it’s hot out at night. Not, to be clear, when I’m trying to sleep in it. But outside in the summer and it’s warm the whole time? 😊

Nachos are REALLY GOOD. I plan to remix the toppings on a slightly healthier salad tomorrow for lunch but this was kinda perfect dinner. I frequently eat on my balcony which has a great view; I have provided an impressionistic rendering to avoid self-dox. #food

Today’s lunch is a bigass salad. I think a lot of the proportions and ingredients are good but I want a bit more flavor in the dressing. This begins the “summer vegetable” themed posting #food

Hearty salad in a clear plastic round 2L cambro container. There’s a little over a liter of salad.

Salad ingredients:
Mixed greens
Tomatoes
An entire lightly roasted zucchini
Half a cucumber 
1/4 block of tofu chopped up
Some brown rice and quinoa mixed in

Dressing: generous scoop of garlic scape pesto, tomato juice, bit of olive oil, bit of red wine vinegar

People talk about “broiling“ or “roasting” but I think the right verb for being in a small hot space is “braising”, which describes cooking for a prolonged period in liquid

Made walnut-wheat scones! Recipe in alt. I have made these a few times — I mashed up the King Arthur default scone recipe with some pancakes my mom makes. Cooked oatmeal makes a good vegan egg substitute for scones #food

330g white whole wheat pastry flour 
67g granulated sugar
¾ tsp salt
1 Tbsp baking powder
¼ tsp cinnamon

8 Tbsp (113g) unsalted vegan butter (or regular butter, or if you can only find salted vegan butter, reduce salt content)

1 cup chopped walnuts (110g)

110g cooked oatmeal (or 2 large eggs)
2 tsp vanilla extract
145g unsweetened soy milk (or regular milk)

Preheat the oven to 425F and prepare a sheet pan for baking. In a measuring cup or small bowl, mix together the oatmeal, vanilla extract, and unsweetened soy milk.

Combine flour, sugar, salt, baking powder, and cinnamon in a larger bowl. Cut 8 tbsp of butter into the dry ingredients, then mix in the walnuts.

Add the wet ingredients and mix until the dry stuff is fully hydrated. Lightly flour the countertop and fold the dough a couple times and pat into a flat round. Cut into 8-12 triangles with a bench scraper and put them on the baking pan. Bake for 22-26 minutes

🍜 of the day: Currently on a pasta kick because I keep finding myself needing to use up random quantities of random vegetables. I maybe put too much garlic in but it’s good.

Fusilli pasta in a pan with kale, pumpkin purée, tvp “sausage”, onions, and a LOT of garlic scapes. The garlic scapes were food processed and so are camouflaged by the kale.
