While some people are dunking on that "Appalachia" menu and some are saying it's an intentional insult to Appalachian cooking, I want to recommend Praisesong for the Kitchen Ghosts by @crystalwilki.bsky.social which is a beautiful book with real recipes from generations of Black Appalachians.
