Glad I saw this post, because I was one of those people who dismissed the email, and sent it to my trash folder. I was able to go back and click the "terms" link in the email, and then scrolled down to the "Ai model training" tab. Expand that, and hit the opt out toggle to "off"

eBay users! Don't ignore today's email, even though it looks like a boring standard update to the User Privacy Notice. They want to use your data to train AI models. If you click the link over the words "the right to object", it takes you to a page with a toggle button letting you opt out.
