Big enough, smart enough, rich enough! Motto for life and my own country!🏴󠁧󠁢󠁳󠁣󠁴󠁿 Single Mum with two spicy kids and a big dream.

Doesn’t look very pretty - but tonight we canned up 13 jars of cat food for our ginger one! He’s actually looking really healthy on it - the vet calls him “well made” LOL. The winter fluff is also coming in thick and floofy! So - stinky job, but appreciated by the smallest member of the house

Grrr! Did all the research before my youngest went off to Uni - course, accommodation and support! Everything was going perfectly. Sadly one of his profs is an anti-vax, climate denying Trumper transphobe …. So looks like it’s going to be a long year!

Busy day here at the Croft! But I did manage to get one batch of dehydrating in. One bag of frozen peas - into one jar. I don’t do peas as a side but as an ingredient & I hate random peas falling out in the freezer. So a solution to one of the annoying things in life LOL

One pickle jar three quarters full of bright green dehydrated peas

Last success of the day - 500g of basil salt! TBH there is more here than I will use in a year so once I am sure it’s very dry I will decant it into three or four smaller jars and gift them to my friends. It’s amazing stuff on a tasteless February tomato - really makes it taste like summer

Oh my goodness - just when I thought I was on top of this weeks freebies a pal dropped these off! Thirty pears looking for a good home! Now I still have ten jars of canned pears in the Cantry … so I think I will throw these into the slow cooker and make pear and cinnamon butter instead!

Busy day on the Croft dealing with some leftover foods that need preserving. Basil will be made into basil salt. Thyme will be dehydrated as will the carrots and mushrooms. Chillis will be strung onto thread and hung in the window so slowly dry out for chilli flakes and seeds for next year!

Still processing the 15 kilos of organic carrots I scored for FREE! Top and tail. Chop into 1cm dice. Blanche & ice-bath then into the dehydrator till bedtime. 14 kilos will make a little over 1.5 litres of dried bits, that’s the big jar at the back. Now to keep an eye open for next project.

Yesterdays prep for winter here on the Croft!! Six coleslaw mix, 5 salsa, 5 lemon green beans & 3 balsamic beans. Oh - and a quarter jar of chopped carrots in the dehydrated soup mix jar. Hoping for more veggies in the charity collections soon x

Showing you how the free food I scored over the weekend ended up being just about a whole jar of dehydrated bits. So much easier to store on the shelf for cooked dishes through the winter & TBH you can’t even tell they have been dried Saving the pennies so I can have more people at my table x
