Round 2: Tonkotsu Ramen at Menya GAGA (麺屋 我ガ) in Shibuya, Tokyo (main Shop in Fukuoka). A classic tonkotsu ramen in the tradition of Ichiran. Simmered for over 21 hours, the creamy broth is rich in umami without the usual strong aroma. The house-made thin noodles pair perfectly with the soup.
