Welp, I was planning on doing a bit of a micro-story idea I had in my head while I was between commissions but sitting here at 10k words already with another two or three scenes planned, I think the idea of it being a small piece has well and truly gone out of the window ๐
Decided to use the four day weekend to do some more cooking and this time try some new methods. Spatchcocking the chicken and separating the skin to put the rub under it was definitely the right call. Crispy skin and beautifully moist meat all the way through ๐ #cookingsky #homecooking
