tried experimenting with making a sort of pseudo Hollandaise sauce or a fauxandaise sauce? is just bechamel with some vinegar and a little sugar to replace the lemon cuz I didn't have any plus some turmeric for color. it's definitely lighter than a real Hollandaise, but still delicious
