Hello potato fans if you too would like these then do this: 1. Peel and cut potatoes to 2-inch chunks 2. Boil in salted water for 10 mins 3. Drain water, shake potatoes rigorously to fluff up exterior 4. Put in a roasting tin, toss with olive oil, thyme (or whatever), salt and pepper (cont'd)
