Donkey Kong 64 has a large number of collectibles, but the Internet is full of misinformation on what exactly that number is. I present an accurate count based on comprehensive datamining, aiming to answer this question once and for all: Donkey Kong 64 has 2142 collectibles.

The Number of Collectibles in Donkey Kong 64, Settled Once and for All
based on the datamining efforts of DK64 expert and DK64 Randomizer creator Ballaam
The Internet is full of misinformation about the number of collectibles in Donkey Kong 64. Various guides, articles, and even the Guinness Book of World Records all list wrong numbers due to either neglecting to count some type of collectible, or not considering that the coin and banana counters are not equivalent to the number of coin and banana collectibles; e.g. Banana Balloons add 10 bananas to the counter, and Rainbow Coins add 25 coins, while each only being a single item.
Note: a "collectible" is any individual item for which the collection status is saved to the save file, i.e. which does not respawn after collecting if the game is saved, exited and loaded again. This is as opposed to "pickups" like ammo that do respawn.

In Donkey Kong Bananza, signs appear that indicate that Tiny Kong owns a bank. The official German website for Donkey Kong 64 claimed she was a tax official and managed the savings of DK Island. Whether giving her a finance-related job is a deep cut reference or an astounding coincidence is unknown.

In Donkey Kong Bananza, a particular location is filled with billboards referencing various Kongs. Tiny Kong's reference is through signs for a bank she apparently owns.
NAME: TINY KONG
OCCUPATION: TAX OFFICIAL
HOBBIES: TOOTING THE SAXOPHONE, FASHION
FAVORITE DISH: WATCHES HER WEIGHT, ONLY EXTRA-LIGHT MEALS
FAVORITE MOVIE: BANANIC
GREATEST HERO: KONGIA SCHIFFER
OCCUPATION: TAX OFFICIAL
the island and that is out of the question for Tiny. Instead she prefers to juggle numbers and manages the banana coins savings and the financial system of the island.
The official 1999 German Nintendo of Europe website for Donkey Kong 64 claims that Tiny Kong's job is being a tax official on DK Island. She also "manages the banana coins savings", making her very well suited to run a bank.
Donkey Kong Bananza contains several extremely deep-cut lore references, so while it is unlikely the writers were referencing this specifically, it is not entirely out of the question. Even if unintentional, giving Tiny Kong a finance-related job is an astounding coincidence.

When playing Donkey Kong Country Returns, you may notice that Donkey Kong never clips through platforms even when he logically should. The secret is that Donkey Kong does not actually exist on the same plane of reality as the rest of the game, and is merely superimposed on top of it.

In a platformer with 3D models but a 2D plane of movement, a semisolid platform is usually something the player must clip through when jumping on it. While a fully 2D platformer can just draw the character in front of it, in a 3D platformer both the character and the platform occupy the same space.
However, in Donkey Kong Country Returns, Donkey Kong somehow never visibly clips through anything. Note how he jumps up seemingly in front
of the flower, but ends up in the middle of it? How did he not clip through it on the way up?
The secret is that Donkey Kong does not actually exist on the same plane of reality as the rest of the game. His model is rendered with a separate camera and a 2D image of him is superimposed onto the game world. This allows him (and Diddy Kong) to be drawn over semisolid platforms as he jumps in front of them. For special occasions like death, he does enter the 3D plane.
This illustration from a patent application for this game shows what is happening. Being 2D allows Donkey Kong to simply be drawn in front of the platform.
