Rush Creek Reserve is a limited seasonal release from Uplands Cheese in Wisconsin and I make sure to secure one every year. Soft and custardy and intensely savory, this cheese is an umami bomb in a spruce bark wrapper. IMO Best paired with potatoes, thick bacon, cornichons, and beer.
