There are pokemon that are clearly sentient animals, and clearly sentient pokemon plants. The grass that pokemon hide in is probably sentient. Eating a vegetarian diet of sentient plants is as ethical as eating the meat of sentient animal pokemon. You could probably eat humans and get away with it.
