I refer readers to Richard Beckett's excellent history of food in Australia, 'Convicted Tastes'. Published in 1984 and still a damned good resource for anyone interested in the subject. Very hard to come by these days, but it's in the National Library in Canberra.

The US also has around 16 to 20% of the world's incarcerated population, in their for profit prisons. Most US manufacturing is done by prison slave labour.

Zucchini fritters are great. Or my simple version is. I grate some zucchini, maybe a cup and a half. Squeeze it dry. Mix it in with plain old all in one pancake mix, add a little garlic powder and just enough water to get it pancake batter thick. Get your pan hot with oil - and make some.
