I fell in love with The Malazan Book of the Fallen by Steven Erikson, but it is dense and most of my friends don’t like it. Also loved The Farseer trilogy by Robin Hobb.
Seconding the rec for Once and Future Witches - I had a great time with it. Kushiel's Dart et seq. was sumptuous, lush & heartbreaking. I'm currently having an indecently good time with Violet Fenn's Netherweird series: urban fantasy in Liverpool with cats, firebirds and undead monarchs, oh my.
Go back to the source, 18th Baron Dunsany. King of Elfland's Daughter or for a short read, The Kith of the Elf Folk (Not just saying that because I just illustrated it. I pitched the book because I love Lord Dunsany) also From The Dust Returned by Ray Bradbury.
M.A. Carrick's "Rook & Rose" trilogy (The Mask of Mirrors, The Liar's Knot, and Labyrinth's Heart). Adrian Tchaikovsky's Philosopher Kings series (starting with "City of Last Chances," which I felt showed his writing going up another level. Again.)
I recently read and loved Becky Chambers Psalm for the Wild Build which felt like fantasy even though it had robots in it.

The Year of Our War by Steph Swainston. A bunch of selfish ne'er do wells granted immortality by the emperor bicker and plot amongst themselves while leading mankind's fight for survival against an endless rapacious horde of horse-sized insects covering the land in their chewed-paper hives.
Tombs of Atuan by LeGuin. (I mean, the whole of Earthsea books and short stories, but if I had to choose)
This year I've liked Amal el-Mohtar's The River Has Roots & Alex Jeffers's A Mourning Coat. Couple of series I really like - Juliet E McKenna's Green Man series & AK Faulkner's Inheritance series. Also really liked Caitlin Breeze's The Fox Hunt & AJ Lancaster's A Rake of One's Own.
The Last Unicorn by Peter S. Beagle. A constant surprise, a reinvention, a love song to the genre. Gogmagog and Ludluda by Jeff Noon & Steve Beard. Insanely joyful levels of invention and imagination. A superbly cantankerous, foul-mouthed octogenarian herione.
